Salsa Verde Cruda

Serves 4

This salsa can be served as a dip for chips. As a condiment for tacos. Or as a sauce for a light healthy fish dish.

4 large tomatillos
2 jalapenos
½ medium sized onion
2 cloves garlic
2 tablespoons lime juice
½ cup water
½ bunch cilantro
1 tablespoon salt

Puree all ingredients in an electric blender until somewhat smooth and refrigerate for one hour prior to using. Water will tend to separate from the solids so stir briskly before using. Always taste chilies before adding because the heat level can vary dramatically. Add as much or as little chile as you like.
